Moving to Italy came with one very important responsibility: finding the best pasta in the country. I know, quite the feat. But my husband and I are on a full-blown mission to find it. We've been tracking down the internet's most viral recommendations, and last weekend, we even took a 90-minute train to Florence (in 37°C weather) to try an iconic restaurant that locals keep raving about. And I know it's still early to say, but I REALLY think we (might've?) tasted the best pasta in Italy.

Two days in almost 40°C weather is no joke.
The Florentine restaurant is called Osteria Pastella, and while people online have been raving about it for years, the experience in person is even better than you could imagine. I'm pretty sure I died and went to heaven after my first bite of their iconic "Tagliatelle flambé al tartufo fresco in crosta di Grana Padano." I know — that's quite the mouthful just to say. And for those who are new to learning Italian (like me), the dish translates to "flambéed tagliatelle with fresh truffle in a Grana Padano crust."

And no, I'm not being paid to promote this restaurant. This is simply one pasta lover telling another that you absolutely need to try this place.
First, let me set the scene. We arrived at the restaurant just 30 minutes after it opened, around 7:30 p.m. (Dinner starts much later in Italy.) And yup, there was already a lineup, which was a pretty good sign we were in for something special — dare I say life-changing! And while you wait, there is someone making fresh pasta by hand right in the front window!!!

Then, you're welcomed into a deceptively large restaurant. From the outside, it looks like a quaint little hole-in-the-wall, but once you step inside, it seems to go on forever. So the fact that it was already packed — with a line out the door just 30 minutes into service — was seriously impressive.

As soon as you're seated, you're greeted with a complimentary glass of Prosecco, fresh bread, and their iconic cheese balls.

We found out that everything they do at Osteria Pastella is about creating an unforgettable experience. Of course, I had to order the dish they're most famous for, as I said before: their truffle cream tagliatelle. I know what you're thinking. A pasta made with fresh truffles? Of course you're going to call it the best. IT'S TRUFFLESSSS!!!

But honestly, that wasn't why. Sure, truffles don't hurt. Truffles are DECADENT! But this wasn't just about the ingredients. Everything felt like a performance. 'Cause they don't just bring over your truffle pasta and call it a day. They make it for you...right in front of you. Let me tell you how...
First, they wheel over a cart with a massive Pecorino cheese wheel, and that's when the show begins. They drizzle Italian bourbon into the center of the cheese wheel and then...light it on fire. As the flames melt the cheese, the server scrapes up generous ribbons of it to coat the pasta.

Then, they return with the piping-hot pasta in cream sauce and pour it directly into the cheese wheel. As they toss everything together, the melted Pecorino and bourbon combine with the cream sauce to create an unbelievably rich, velvety coating for the pasta. To finish it off, they drizzle in white truffle oil to really take it to the next level.

Then, they expertly twirl the pasta into a beautiful nest and plate it in a vintage bowl. To finish it off, they crack fresh black pepper over the top and shave slices of truffle right onto the pasta. My mouth was WATERING at this point! The whole experience felt incredibly decadent and unapologetically bougie, and I couldn't help but think my "I've been wandering around Florence for 10+ hours with my makeup running and my wrinkly dress denched in sweat" look wasn't nearly classy enough for the experience we'd just witnessed.
We couldn't get enough of it. And while €28 (about $45 CAD) is definitely a splurge for a plate of pasta, the experience alone makes it worth every penny. The food is incredible, but it's everything that comes with it that really justifies the price. On top of the complimentary Prosecco, fresh bread, and their iconic cheese balls, they even end your meal with a shot of limoncello — also on the house. By the end of the night, you definitely get far more than just a bowl of pasta with your price.

And now I'm ruined. I genuinely don't know what to do with myself. How am I supposed to keep eating pasta in Italy knowing I've already had the best of the best? It's been four days since I tasted it, and I haven't stopped thinking about it. I haven't stopped talking about it. This pasta has completely taken over my life, and I'm already trying to figure out how soon I can justify another trip to Florence for my next fix.
